Since the 4th of July is getting closer and closer, I thought we could use a fun red, white and blue dessert. I’ll be taking this easy dessert with us to our favorite fireworks event.

The blue Jell-O (berry something or other) doesn’t come in the small packages. Just use half of the large package, it’s fine. Save the other half for the next time you want to make this yummy dessert! Or, go ahead and make a few Jell-O cups for the kids. Either way, it won’t go to waste!

I made my Blueberry Cream Dream Pie in a soufflĂ© dish instead of a square pan. I couldn’t find my square pan anywhere! It worked just fine in the round dish, but I will say that you’ll get less servings out of a round dish. And the pieces will be thicker. If you only need 8 servings, go for the round dish. If you need more like 12 servings, use a rectangle dish!

To make this fit in with the red white and blue theme, I added a layer of sliced strawberries to the top of the pie after it was set, but you don’t have to do that. It tastes delicious with or without the strawberries!

Blueberry-Cream Dream Pie

Ingredients

  • 8 graham crackers (finely crushed)
  • 2 tablespoons melted butter
  • 1/2 cup blueberry juice (orange juice works well also)
  • 3oz blue (berry flavored) gelatin (one half of a large packet)
  • 8oz package of cream cheese (at room temp)
  • 8oz tub of cool whip, thawed (or 8 ounces homemade whipped cream)
  • 1/2 cup cold milk
  • 3oz package of vanilla instant pudding
  • 1 pint of sliced strawberries

Directions

Step 1
MIx graham crumbs and butter, until well combined. Press into bottom of 8 inch round soufflé dish or 8 inch square pan. Refrigerate until ready to use.
Step 2
Microwave juice in a bowl on high for 1 min. Add gelatin mix to the juice and stir for two minutes, until completely dissolved. Let cool for about 5 minutes.
Step 3
Gradually add the gelatin to half the cream cheese in a medium bowl, using a hand mixer to thoroughly combine.
Step 4
Fold in 1 cup cool whip or whipped cream and spread over crust. Freeze and make next layer.
Step 5
Beat remaining cream cheese and milk in a medium bowl until blended. Add dry pudding mix and beat with the hand mixer until well combined. Fold in remaining cool whip or whipped cream.
Step 6
Spread over gelatin layer. Refrigerate at least three hours. Add sliced strawberries to the top before slicing to serve.

  1. this looks so good except I don’t care for blueberrys so I will use strawberry juice and strawberry jello instead.

    • That would taste great, too! I was thinking peach would be another good option.
